Global Gourmet’s DIY Stuffing: Free-Form and Fabulous - (USA)
Thanksgiving dinner is all about the dressing (or stuffing, if you prefer). Of course, there’s much more to the all-American menu, but aside from the turkey, dressing is arguably the dish that really screams Thanksgiving. In fact, I’ve been to many a turkey-free vegetarian Thanksgiving, but I’ve never been to a dinner that didn’t serve dressing. The best thing about making dressing is that you don’t need a recipe. Ditch the measuring cups and go free-form. All dressings deconstruct into th

More Food for Thought: What's Behind the Obesity Epidemic? - (USA)
May 13, 2009 Perhaps our search for the causes of obesity has been channeled into a narrow medical mindset; perhaps the answers are locked in a more elusive integrated understanding. The obesity epidemic rings all sorts of cultural bells, but our focus should be understanding the causes. The "lifestyle" killers are all well-known: smoking, alcohol abuse, poor fitness and diet, stress and obesity. In our usual reductionist "scientific" mindset, we have sought a single mechanism or cause f

5 Tips For Buying Meat Without Breaking The Budget - (USA)
We have cut back considerably on the amount of meat we eat around here, opting for as many meatless meals as we can in a week. We also have found that serving meals where meat is not the main feature but rather mixed into a casserole or other dish stretches it much farther. I usually cut the amount of meat in half for recipes. For example, if a recipe calls for 1lb I will cut back to a 1/2 pound and bulk up on the other ingredients that are usually less expensive. Every now and then though, my

One Last Serving of Food for Thought - (USA)
Readers responded to yesterday’s examination of the causes of obesity with some interesting resources and ideas. The obesity epidemic can be viewed visually via this slideshow map of the U.S.: Centers for Disease Control, U.S. Obesity Trends 1985-2007 It is sobering indeed. Only 20 years ago a scant 8 states had obesity rates of 15% or more. As of 2007, only 1 state had obesity rates under 20%, and 30 states had rates of 25% or more. That is a dramatic demographic change in only one ge

Be thankful you're not dead - (USA)
It's Thanksgiving Day in the United States. In the rest of the world, I gather, it's a regular day. The real point of Thanksgiving seems to be to overeat, spend time with family members, and rest up for shopping tomorrow (big sales start in a few hours). My wife has made a couple of pumpkin pies. I've got a vegan Tofurky cooking in the oven. There's thankfulness pouring out of every pore of our daily newspapers and Internet news sites. I'm not big on holidays. I don't like following a soc

The Christian Vegetarian Association Needs Some Help In Franklin - (USA)
I'm posting this for PETA, as a member and supporter of the organization. Also, I didn't know there was a Christian Vegetarian Association, and with so many Christians in the area, I thought they may want to join in. It makes sense. As a Christian, you're not supposed to kill, and that includes animals. In Genesis, it's clear that we are supposed to be vegetarian. (Yes I know of the concession after the flood and the laws of kashrut--which is supposed to be the most humane way to kill an an

November 29, 2008 at 1:35 pm | In chatty, cooking is crafty too | Our Thanksgiving was really nice, and I hope yours was too — things were very relaxing and low-key all day and then we headed over to a big potluck dinner with friends later on. I made salmon with chanterelles and leeks and a big pan of vegetarian stuffing, and we got to try about a zillion other delicious things people brought, too. The four-day weekend has some pockets of work here and there but this is the most time off we’v

Stuffed Portabello Mushrooms - (USA)
We have Thanksgiving every year with Ellen’s sister Ann and her family. Ann and David make the turkey, stuffing, gravy, and more good things, which I always enjoy. Ellen, being a vegetarian, doesn’t eat those, so we make something veggie she can have instead. This year we did these stuffed mushrooms, a slightly different version of the recipe I described here. The main difference is using somewhat smaller mushroom caps, and baking instead of cooking them on the stove top. STUFFED PORTABELLO

One quick and easy way to reduce your food bill - (USA)
This is a throwback to something I first learned as a broke-ass grad student in New York: If you want heavy duty nutrition for not a lot of money, rice and beans is a great way to go. When I first moved to New York in 1993, I learned early on that if I didn't want to end up paying off my education for thirty years, I'd better make as much money as possible and cut my cost of living wherever I could. The income part was pretty straightforward: between internships, admin work on campus, and te

Post from: To Live and Eat in L.A. - A Vegan Food Photo Blog Oh boy do I owe you guys an update. Too bad for you my pretties… I’m too busy cooking up a vegan Thanksgiving storm! Here’s partial proof (there are a lot more ingredients in the fridge and freezer which I didn’t feel like dragging out for the photo): Really it’s a big deal considering I hardly ever cook and I’m serving this stuff to my very-not-vegetarian family. Holiday Brunch-Worthy: Tofu Omelet with Pesto, Caramelized Onions and Mushrooms - (USA)
November 29, 2008 Now, I realize I promised a light and not-too-filling recipe today, but before we get to that, I must share something very rich and decadent and–because I ate most of it in one sitting–rather filling: the Peppermint Ritter Sport bar I won (a while ago, now) in Amey’s contest! I received the bar in the mail a couple of weeks ago, and was thrilled to rip open the envelope and find that it reached me in perfect condition–all the way from California! While a couple of the squar

Do you know the children's story by Judith Viorst, Alexander and the Terrible, Horible, No Good, Very Bad Day ? Well yesterday I felt like I'd stepped into the shoes of a grumpy little boy who'd been force to eat lima beans and wear his loathed railroad-train pajamas. For some reason the software I use to write my blogs refused to post. After an hour or so, I redid the whole mess in Blogger itself. And what happened? Google's blogging darling vomited the text into cyberspace in one unformatte

'Top Chef: New York': Richard's out for spat-upon s'mores - (USA)
Top Chef: New York was all about rock stars this week. First, the guest judge was culinary rock star Grant Achatz of Chicago's Alinea. Second, the cheftestants prepared a Thanksgiving dinner for rock-star foodies -- in the middle of summer, and in a town with no Whole Foods. The horror! With spoilers, it's al dente. With potatoes, it's undercooked. The cheftestants meet the guest judge (Grant Achatz, which: Squeeeeeeeeeeee!) and are assigned a recipe from the top Chef cookbook, which need t

Miss Dahl’s Voluptuous Delights by Sophie Dahl - (USA)
The first thing to say is that this is a quite beautiful volume. The cover is lovely, the binding is lavish and the paper is thick and heavy. The design is wonderful and the photography is stylish. So do the contents live up to this? Well yes, I think they do. The recipes are organised by season, and each season has recipes for breakfast lunch and supper. And there are some lovely puddings with a chapter to themselves at the very end. And each section is introduced with some of Sophie’s fo

Wow I’ve been really slammed this week! Prepared some really nice recipes, and even snapped some photos that were ok too. Unfortunately, that’s where it ended. Unthinkable? Not any more...What is to be done? The innocuous question has probably been asked by so many individuals throughout history. Lenin famously asked it in 1901, and then spent the next few years cooking up a revolution that changed history (for better or worse, depends on where you come from). What is to be done? I popped this same, unoriginal yet useful question during my recent presentation to an assembled group of media tycoons and senior journalists in Colombo, at the Sri Lanka lau
